Your description of Baccano was spot on bc I actually dropped it the first time I watched it bc I didn’t understand what was going on. Later I went back and watched the whole thing and was like omg this is amazing
Bungou Stray is so good i went back to watch it again after three months
I saw all of them and the only one worth watching is the Apothecary Diaries. The others are boring, Spice and Wolf is downright annoying.

Monster, Vinland saga, Orb: movements of the earth and Frieren: beyond journey's end would have been great addition to the list
To be honest the only Anime i enjoyed in the last year was Kaiju no. 8.. I tried to watch Bungo Stray Dogs, but i could not get into it and i just watched the 1st episode, it seemed pretty basic to me.. Maybe i'll give Baccano a try seems interesting, the rest seem meh ( but maybe i should try them )
